Chocolate Cake Supreme

Mark’s favorite birthday cake – he asks for it every year. This cake is very rich and moist.
2 cups white sugar
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
Directions:
Preheat oven to 350o. Grease and flour two 9 inch round pans. (or spray with PAM)
In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk, oil and vanilla, mix for 2 minutes with mixer on medium speed. Lastly, stir in the boiling water. Batter will be thin. Pour evenly into the prepared pans.
Bake 30 to 35 minutes in the preheated oven, until the cake tests done with a toothpick inserted in the middle that comes out clean. Cool in the pans for 10 minutes, then remove to a wire rack to cool completely.
Frosting:
6 Tbsp butter
6 Tbsp milk
1 ½ cups white sugar
Mix the above ingredients in a saucepan. Bring ingredients to a boil. Stirring constantly, boil for 1 minute (hard rolling boil)
Remove from heat and add:
½ cup chocolate chips
6 large marshmallows
1 tsp vanilla
Stir to melt and combine ingredients and create a smooth frosting. Stir occasionally while cooling for a few more minutes before attempting to spread on cake. Put some of the frosting on top of the first 9” round. Then place the other 9” round on top. Add the rest of the frosting on top, a bit at a time. It will be very soft and somewhat runny. Sometimes it is difficult to make it look pretty, but oh well – it still tastes great!!
