Pina Colada Protein Balls

A healthy treat that tastes like summer.

 

Ingredients:

1 cup dried pineapple pieces, soaked in hot water, to soften

1 cup cashews

1/2 cup unsweetened shredded coconut

1/4 cup chia seeds

¼ cup Shaklee Life Shake – Pina Colada flavored

1 Tbsp lemon juice

½ tsp sea salt

Additional coconut for rolling

 

Directions:

Add pineapple chunks to food processor or heavy-duty blender and process until broken up into pea-sized bits. If your pineapple pieces are not sticky, be sure to soak them in hot water for 10 minutes to soften and then drain.

Add cashews, 1/2 cup of coconut, chia seeds and Pina Colada Life Shake and process until well combined.

Add lemon juice and sea salt and process a little more until dough comes together into a large ball (add a tablespoon or two of warm water if needed).

Roll into small balls and then roll balls in additional coconut. The mixture will be sticky.

Place in freezer for 15 minutes. Store in fridge for up to 1 month.
