Greek Yogurt Clusters

I just discovered this yummy recipe for a cool refreshing treat. They taste a bit like decadent cheese cake but are actually healthy. Enjoy!

Ingredients:

  • 1 cup fresh blueberries

  • 1/4 cup Greek yogurt - plain or vanilla

  • 1 Tbsp honey - (optional)

  • 1/2 tsp vanilla extract

  • 1/2 tsp lemon zest

  • pinch of salt


Mix all the ingredients in a bowl. Add the blueberries last and fold in gently.

Line a dish with wax paper and drop dollops of the mixture on the paper.

Freeze. Enjoy!

The clusters will still be rather fragile so use a spatula to serve them.

This is an easy recipe for kids to make.
