Chocolate Mint Truffle Protein Balls

This recipe is a favorite at our house when we want a sweet treat. The best part is that is is also good for you! They are easy to prepare ahead of time and share with friends over the holidays.

Ingredients:
1 cup almonds
½ cup rolled oats
¼ cup Shaklee Life Shake Chocolate
¼ cup cocoa powder
½ tsp peppermint extract
¼ tsp sea salt
2 Tbsp milk
1/3 cup mini chocolate chips
Chocolate coating for dipping (optional)
Crushed peppermint canes or disks for coating (optional)
Directions
Combine almonds, rolled oats, Life Shake, and cocoa powder in food processor or blender. Blend. Add peppermint extract, sea salt and milk. Blend again until it becomes sticky and workable. Add mini chocolate chips and blend briefly.
Scoop small amounts and shape into balls. Place on wax paper lined cookie sheet.
Put in freezer for ½ hour to set. Dip cold balls in melted chocolate to coat. Dip the balls in crushed peppermint candy. Let harden. Store in airtight container in the refrigerator.
