Broccoli Cheddar Frittata Cups

This recipe is great fresh from the oven or for cooking ahead and using for a quick breakfast. I have also made a large batch and taken to family reunions for a super easy brunch entree.
Ingredients:
2 1/2 cups broccoli florets chopped fine
1 cup grated cheddar cheese
6 large eggs
3/4 cup milk
1/2 tsp salt
1/8 tsp pepper
Directions:
Preheat oven to 350. Spray muffin pan with oil
Steam the chopped broccoli florets in the microwave with 1 Tbsp water until crisp tender - about 2 minutes
Evenly spread a small amount of broccoli in the muffin cups and top it evenly with the grated cheddar.
Make the egg custard mixture by whisking together the eggs, milk, and seasonings. Pour the egg mixture in each muffin cup. Bake until the center is set - about 25 minutes
Let cool and carefully remove each frittata from the pan.
These can be eaten immediately or stored in fridge or freezer for later. Reheat in oven or microwave.

Notes: This recipe is easy to double or triple.
This recipe also adapts well to making in a pie pan to serve in slices.
Feel free to substitute other ingredients of your choice such as diced ham, spinach or other veggies.
